This no frills side salad with white wine vinaigrette is just that. It’s nothing fancy, but it’s delicious and will go with most anything. As much as I love a massive salad loaded with ingredients like roasted sweet potatoes, chickpeas, and goat cheese, sometimes simple is the best option. I may take this sentiment too far sometimes… I would argue that plain greens, a good olive oil, and salt and pepper make a perfectly acceptable side salad. Others in my house tend to disagree. So, if you’re looking to straddle the line between “just greens tonight, don’t give me that look” and “is this the side dish or the main course?” this salad is for you.
You probably already have all of the salad ingredients on hand — just mixed greens (farmer’s market ones are the best), red onion, and cherry tomatoes. The vinaigrette is also incredibly simple, requiring just three ingredients plus salt and pepper. The vinaigrette might taste almost too tangy if you try it straight, but once you’ve mixed it with the salad you won’t be disappointed. I love this recipe because it’s low in effort but high in reward. Don’t let the minimal ingredients fool you, this no frills side salad is super flavorful!

For the vinaigrette (makes extra)
- 4 tbs extra virgin olive oil
- 3 tbsp white wine vinegar
- 1 small clove garlic, minced
- Salt and pepper to taste
For the salad
- 3–4 cups mixed greens
- 10 cherry tomatoes, halved
- 1/4 to 1/3 cup thinly sliced red onion, depending on your preference
1. Combine the dressing ingredients in a small bowl and whisk vigorously. Set aside.
2. Assemble the salad ingredients in a large bowl and dress to taste.
The extra dressing will keep in the fridge for several days.
